Back in November I bemoaned that I didn't have a decent picture of my Thanksgiving stuffed turkey breast.
Well, I still don't, so this will have to do.
The de-boning of the turkey was much improved by a new and much sharper knife. I also got ahead of the game and de-boned the bird several days in advance. So by the time it was stuffed with the kale-sausage mixture it was totally thawed out. This meant that it gave me a good thermometer reading with much less roasting, and overall was much moister. The Brussel sprouts roasted with the bird in the last twenty minutes. Many thanks to Sara Lee for the rolls!
